Quick Lenten Friday Recipe: Fried fish Arkansas style

This is not so much a recipe as an interesting food pairing. I’m not really sure if this has actual roots in Arkansas, but we got this from my wife’s grandmother, and she did have roots there. Bread and fry some fish. Catfish is best, but any flaky white fish will suffice. It can be beer battered, rolled in bread crumbs, or panko crusted. How ever you like it best is fine. Serve with thickly sliced dill pickles and onions. Get a bit of each, pickle, onion, and fish, on each fork full. Simple and flavorful.
