Salsa and stuffed peppers!
No, this is way too good for Facebook! My neighbors grow pansies.
Lucky you! I’m thinking North African food–there’s a great Tunisian dish of scrambled eggs with roasted peppers and tomatoes (called tastira? Testira?). You can serve it alone or as a sauce for fish. Or you have the makings of a great Shakshuka!
Shakshuka for the win and tastira at a close second. How have I lived this long and never heard of either of those? I might be able to eke out both from that bowl and still stuff peppers. Happy days.
Upon further review I am waiting for the birth of boy #2 in September because my wife is having a time of it with pregnancy in the Alabama summer and I’m not going to add to it by enjoying eggs that she can’t have. Doctors are restrictive. They secretly hate human people.
